Ingredients You’ll Need:
- 2 lbs of peeled and deveined shrimp
- 1 lb of Conecuh smoked sausage
- 1 onion, chopped
- 1 red bell pepper, chopped
- 2 cups of milk
- 2 cups of heavy cream
- 1/2 cup dry roux
- 1/2 block pepper jack cheese, shredded
- 1/2 block muenster cheese, shredded
- 1 cup of quick grits
- 1 egg, beaten
- 1 bundle of green onion tops, chopped
- 1/2 cup chicken broth
- 1 can of Cream of Shrimp soup
- 4 tablespoons of butter (for grits)
- 1/2 teaspoon salt (for grits)
- Granulated onion
- Granulated garlic
- Cayenne pepper
- Craig’s seasoning (to taste)
- Old Bay seasoning (to taste)
- Black pepper
- 2 tablespoons of minced garlic
- 2 tablespoons of dried parsley
Let’s Get Cooking:
- Begin by heating the milk in a pot until it’s almost boiling, but be sure not to scald it. Add in the grits, a pinch of salt, and 4 tablespoons of butter. Bring it to a boil while stirring, then reduce the heat to simmer low, cover, and cook for 5 minutes. Remove from heat and stir in half of the shredded cheese, dried parsley, and black pepper. Set the grits aside.
- Grease a baking dish, beat the egg and add it to the grits, mixing well. Pour the grit mixture into the baking dish, then place it in a preheated 375-degree oven and bake for 20 minutes or until the grits are set and lightly golden.
- In a skillet, melt 5 tablespoons of butter, then add in the diced sausage, onions, and bell peppers. Cook until they’re browned and tender. Add in the minced garlic, granulated onion, granulated garlic, and stir until mixed. Now, add in the shrimp and start stirring until they turn pink. Sprinkle in half of the chopped green onions and add a couple of teaspoons of Craig’s special seasoning, dried parsley, and a touch of Old Bay seasoning.
- Time for the magic touch! Add in the dry roux and mix it in. Then, introduce the Cream of Shrimp soup and stir. Don’t forget to include the 1/2 cup of chicken broth. Cook the shrimp mixture until it thickens up, and the shrimp are cooked to perfection.
- Take those golden, cheesy grits out of the oven and spoon the shrimp and some of that irresistible gravy over the top. Now, cover it with the rest of the cheese. We even threw in a bit of shredded cheddar for an extra cheesy surprise. Sprinkle the remaining green onions on top and place it back in the oven just until the cheese is gloriously melted.
