Today, we’re diving deep into one of our family’s all-time favorite recipes – Taco Soup! Now, I know what you’re thinking, “Taco… Soup?” Trust me, once you’ve had a taste, you’ll be hooked. This dish came about one chilly evening (well, as chilly as it gets down here in South Mississippi) when we were craving something warm and hearty. We took the best parts of a taco and transformed it into a comforting bowl of soup. It’s been a hit in our household ever since, especially during those rare cool weather days.
Ingredients:
- 2 to 2.5 lbs of 90/10 ground beef
- 1 onion, chopped
- 1 bag of frozen seasoning blend
- 1/2 a bag of frozen onion and pepper blend
- 2 cans of Rotel tomatoes
- 1 can of diced tomatoes (your choice of flavor)
- 1 can of kidney beans
- 1 can of pinto beans
- 1 can of black beans
- 1 can of whole kernel corn
- 1 can of tomato paste
- 1 can of tomato sauce or Manwich/spaghetti sauce
- 1 to 2 tablespoons of minced garlic
- Seasoning to taste:
- 1 tablespoon granulated onion
- 1 tablespoon granulated garlic
- 1 tablespoon paprika
- 1 tablespoon dried parsley
- 2 teaspoons black pepper
- 1/2 teaspoon cayenne pepper
- Salt to taste (if needed)
- 2 to 3 packets of taco seasoning
- 1 packet of Lipton soup mix
- 1 to 2 packets of dry Ranch dressing mix
- 3 cups of beef broth
Instructions:
- Start by browning the ground meat and vegetables together. We recommend using 90/10 ground beef. Cook until almost all of the liquid has evaporated.
- Once browned, start adding in all of your canned foods one at a time.
- Mix in your seasonings and all the packets.
- Pour in the beef broth until the soup reaches your desired consistency. Remember, it’ll thin out a bit more as it simmers.
- Bring the mixture to a boil while stirring.
- Lower the heat to a simmer, cover, and let it cook for a couple of hours, stirring occasionally.
- Serve with shredded cheese and sour cream. And if you’re feeling a little extra, pair it with some cornbread on the side.
