How to make Blueberry Cobbler

Hey there, Bickham fans! I’m Craig, and today, we’re whipping up a super simple and delicious summer treat: Homemade Blueberry Cobbler. This recipe is perfect for those sunny days when you want something sweet, tangy, and oh-so-satisfying. Paired with vanilla ice cream and a dollop of whipped cream, this cobbler is sure to be a hit. Let’s get baking!

Ingredients

Dry Mix:

  • 1 1/4 cups of all-purpose flour
  • 1/2 teaspoon of salt
  • 2 teaspoons of baking powder
  • 1 cup of sugar

Blueberry Filling:

  • 3 cups of fresh blueberries (washed and rinsed)
  • 2 tablespoons of lemon juice (or juice from 1/2 a lemon)
  • Lemon zest (optional, for extra zing)
  • 1/2 cup of sugar

Wet Mix:

  • 1 to 1 1/4 cups of milk

Additional:

  • 1 stick of butter
  • Vanilla ice cream
  • Whipped cream

Instructions

Prepare the Dry Mix:

  • In a large mixing bowl, combine the flour, salt, baking powder, and 1 cup of sugar. Mix well to ensure all ingredients are evenly distributed.

Prepare the Blueberry Filling:

  • In another bowl, add the fresh blueberries. Pour in the lemon juice and sprinkle some lemon zest if you like a bit more citrus flavor.
  • Add 1/2 cup of sugar to the blueberries and mix well. Set this aside and let the berries soak up the sweet and tangy flavors.

Prepare the Wet Mix:

  • Gradually add 1 to 1 1/4 cups of milk to your dry mix, stirring until you achieve a smooth batter. The consistency should be pourable but not too thin.

Preheat the Oven:

  • Set your oven to 375°F (190°C).

Melt the Butter:

  • Grease a baking dish and place a stick of butter in it. Put the dish in the preheated oven and let the butter melt until it just starts to turn very light brown in spots. Keep an eye on it to avoid burning.

Assemble the Cobbler:

  • Once the butter is ready, pour your wet cobbler mixture over it. Do not stir!
  • Evenly distribute the blueberry mixture on top of the cobbler batter. Again, do not stir! The berries will naturally sink and create a beautiful layered effect as the cobbler bakes.

Bake:

  • Place the baking dish in the oven and bake for 30 to 40 minutes, or until the center is done and the top is lightly golden brown.

Serve:

  • Allow the cobbler to cool slightly before serving. Scoop out a generous portion and top it with a scoop of vanilla ice cream and a swirl of whipped cream. Enjoy the warm, gooey goodness with the cool, creamy toppings!
