The Charm of Blueberry Desserts

Blueberry desserts have a special place in my heart. Growing up, blueberries were a staple in our household. Whether it was blueberry cobbler, blueberry pie, or blueberry muffins, there was always something sweet and blueberry-filled to enjoy. This Skillet Blueberry Dumpling Pie brings back those fond memories and combines the flakiness of a pie with the comforting goodness of blueberry dumplings.

Creating the Perfect Combination

I’ve always loved the texture and flavor of blueberry dumplings, but I wanted to add a bit more structure and flakiness to the dessert. That’s how I came up with the idea of combining it with a pie crust. The result is a perfect combination of juicy blueberries, fluffy dumplings, and a golden, flaky crust. Trust me, this dessert is a winner!

Ingredients

To make this delicious Skillet Blueberry Dumpling Pie, you’ll need:

For the Blueberry Filling:

  • 6 cups of fresh blueberries, washed and cleaned
  • 1/4 to 1/3 cup of lemon juice
  • 2 teaspoons of vanilla extract
  • 1 to 1 1/2 cups of sugar
  • 3 teaspoons of cold water
  • 4 to 6 teaspoons of cornstarch

For the Pie Crust:

  • Ready-made pie crust pack of 2

For the Dumplings:

  • 1 cup of all-purpose flour
  • 1/2 cup of milk
  • 2 to 3 tablespoons of sugar
  • 1/2 to 1 teaspoon of salt
  • 1 stick of cold butter

Additional Ingredients:

  • Crisco or butter for greasing the skillet
  • Pats of butter and sugar for topping

Instructions

Preparing the Blueberry Filling

  1. Cook the Blueberries:
    • Add the blueberries to a saucepan. Add the sugar and vanilla extract. Bring the mixture to a boil, then reduce the heat to a simmer. Let it simmer for about 10 minutes, stirring occasionally.
  2. Make the Cornstarch Slurry:
    • While the blueberries are simmering, make a cornstarch slurry by mixing the cornstarch and cold water. Slowly add this to the blueberry mixture, stirring constantly until it thickens up nicely.

Preparing the Skillet

  1. Grease the Skillet:
    • Grease your cast iron skillet with Crisco or butter. This will prevent the crust from sticking and add extra flavor.
  2. Add the Bottom Crust:
    • Place one pie crust in the bottom of the skillet, making sure it comes up the sides.
  3. Add the Blueberry Filling:
    • Ladle the thickened blueberry filling into the skillet, leaving about 1/2 to 3/4 inch of the pie crust showing around the edges.

Making the Dumplings

  1. Prepare the Dumpling Dough:
    • In a large bowl, mix all the dry ingredients for the dumplings together. Cut in the cold stick of butter until the mixture resembles coarse crumbs. Add the milk and stir until a biscuit dough consistency is formed.
  2. Add the Dumplings:
    • Spoon the dough in, dropping one spoonful at a time into the blueberry pie filling. Make sure to place them all around the pie so everyone gets a dumpling with each scoop.

Adding the Top Crust

  1. Cover with the Top Crust:
    • Cover the pie with the second pie crust, crimping the edges to seal. Use a knife to make a few slits in the top crust. Add pats of butter on top and sprinkle with sugar for extra sweetness and a beautiful finish.

Cooking on the Z Grill

  1. Preheat the Z Grill:
  2. Cook the Pie:
    • Place the skillet on the grill and cook for 1 hour and 45 minutes. Then, increase the heat to 300-325°F and cook for an additional 15 minutes, or until the crust is golden brown.

Serving the Pie

  1. Cool and Serve:
    • Let the pie cool for about 10 minutes before serving. This allows the filling to set slightly, making it easier to scoop.
  2. Add the Toppings:
    • Serve the pie warm with a scoop of homemade vanilla ice cream and a dollop of whipped cream on top.
