- Use the Cherry Chipotle BBQ sauce as a binder for the seasoning. Coat the roast generously and then sprinkle with brown sugar (optional) and your favorite seasoning.

- Let the end pieces rest for a few minutes before slicing. These are perfect for snacking while the main roast continues to cook!
7. Finish the Main Roast:
- The larger section of the roast will take around 1 1/2 hours to reach an internal temperature of 125 degrees F. At this point, crank up the grill to high (450 degrees F) to add a bit more color to the outside. Continue cooking for about 15 more minutes, for a total of 1 hour and 45 minutes. Remember, grill times may vary.
Finishing Touches
8. Final Internal Temperature:
- For medium-rare roast beef, remove the roast at an internal temperature of 125 to 130 degrees F. For medium, aim for 135 to 140 degrees F. The onions in the gravy should be ready by this time as well.
9. Rest and Slice:
- Let the roast rest for at least 10 minutes. This allows the juices to redistribute, making the meat more tender. Slice the roast thinly for sandwiches, wraps, or open-face meals.
10. Serve with Horseradish Mayo:
- For an extra kick, I made a quick Horseradish Mayo. Mix 1 cup of mayo with 1 tablespoon of minced horseradish, seasoning to taste, and 1 tablespoon of Worcestershire sauce. This spread is perfect for sandwiches and adds a tangy flavor to the roast beef.
