These were some of the best spare ribs I’ve ever made, and the Z Grill didn’t disappoint. If you love ribs, you’re in for a treat. Ingredients You’ll Need
- 1 rack of spare ribs, cleaned and trimmed of excess fat
- Your favorite rib rub seasoning (I used my own mixture with some coarse black pepper)
- 1/2 stick of butter
- Hot honey and brown sugar
- Apple juice for spritzing
- Olive oil for a binder
Preparing the Ribs
Step 1: Clean and Trim the Ribs
- Remove the Membrane:
- First things first, make sure to remove the membrane from the underside of the ribs. This helps the seasoning penetrate better and ensures the ribs cook evenly. Don’t worry if you forget; they’ll still taste great! (I’ve forgotten before, and they still came out delicious! LOL!)
- Season the Ribs:
- Coat the ribs with olive oil to act as a binder. Then, generously season all sides with your rib rub seasoning and a good sprinkle of brown sugar. Let the ribs sit while you fire up the smoker.
Smoking the Ribs
Step 2: Preheat and Cook
- Preheat the Smoker:
- Preheat your Z Grill to 300 degrees F. This grill is perfect for maintaining a consistent temperature and infusing the meat with a smoky flavor.
- Start Smoking:
- Place the ribs in the middle of the smoker and cook for 45 minutes to an hour. After that, spray them with apple juice to keep them moist and add flavor. Continue to cook for another hour, spraying with apple juice every 30 minutes.
Wrapping the Ribs
Step 3: Wrap and Cook
- Check the Temperature:
- Once the internal temperature of the ribs reaches 180 degrees F, it’s time to wrap them.
- Wrap the Ribs:
- Lay down a sheet of aluminum foil or butcher paper. Add some brown sugar, pats of butter, and a drizzle of hot honey (if you like a bit of spice). Place the ribs meat side down on the foil and wrap them up tightly.
- Continue Cooking:
- Place the wrapped ribs back on the smoker for another 30 minutes with the meat side down. The internal temperature should reach around 208 to 210 degrees F.
Finishing the Ribs
Step 4: Unwrap and Finish
- Unwrap and Sear:
- Unwrap the ribs and increase the grill temperature to high, or at least 450 degrees F. Cook the ribs for an additional 15 minutes or until the desired color is achieved and the meat pulls away from the bones about 1/4 inch.
- Add BBQ Sauce (Optional):
- If you want to add BBQ sauce or a glaze, now is the time. Brush the sauce on the ribs and cook for another 15 minutes until the sauce is set and sticky.
Step 5: Rest and Serve
- Rest the Ribs:
- Remove the ribs from the grill when the internal temperature reaches around 215 degrees F. Let them rest for 15 to 20 minutes to allow the juices to redistribute.
